What to do...Green Thumb Sunday

With all those tomatoes????

Well, I have been pretty busy lately, with the trip up the Rockpile, engagment shoots and shooting the wedding last night I have been pretty busy and ignoring my garden...sorry all you GTS folks out there! I am feeling a little guilty about the lack of updates and pictures. That doesn't mean today will be any different :)

I have had about 20 lbs of very very ripe tomatoes sitting on my counter now for...oh about a week. They have been using my cell phone at night to text the fruit flies to come on over and have a party, but I thwarted that, finally today...I made sauce. Some killer spaghetti sauce. Now, I am sure y'all out there want my sauce recipe. Seriously, just google "fresh tomato sauce" and I am sure you will come up with something...just kidding. The truth is, I don't really have a recipe. At least not one I follow with amounts and ingredients and stuff.

Here is what I did today...
Take the zillion tomatoes, dip them in a boiling bath until their skins break, drop in an ice water bath until cool enough. Peel skin, core off top squeeze out seeds. Then, I strained the water out and put that on the stovetop to see what it makes. I am thinking either, tomato soup or tomato paste depending on how long I cook it for...

Oh, yeah, right the sauce. then in a big pot, I sauteed onions and TONS of garlic until the onions and garlic were done, added green and red peppers, chopped and the tomatoes. A bay leaf or two, some basil, oregano, parsley salt and just let it cook. As long as you want. Now, I could have put the tomatoes in a food processor to make the sauce less chunky, but this time I wanted chunky sauce. So, now it is bubbling away on my stove, and it has been cooking for hours. The longer you cook, the smoother the flavors become...

Now, one other note on my tomatoes...If you recall, I have had some crazy tomato plants, misbehaving...well. Now it seems as thought the horned tomato worms wanted to crash the party. This happened last year too, and honestly, I am about done dealing with the garden for the rest of the year, and I have gotten plenty of tomatoes, so...I killed the ones I could find, chopped off all the extra leaves on the plants so I could find the worms easier and hopefully the rest of the tomatoes will riped before the first frost which, by the way averages around September 22nd in Concord which is about 20 miles south of here...so technically, I really only have about 2 weeks left...

So, sorry about the lack of images, plus it is raining...and I am tired. That wedding shoot last night wiped me out!

I am so jealous of your tomatoes!!! I had good fortune once (just once) growing Early Girls that went crazy. Since then, my tomato growing has yielded barely enough for a salad. Hoping to read more in your blog, Jessica :-)
